Inchellium

Flavor profile- Buttery with a steady bite. On the milder side.

German Porcelain

Flavor profile – Rich, strong and garlicky flavor and smell; spicy and robust when consumed raw.

Physical characteristics – Enjoy minimal peeling with 4-5 large cloves per bulb – convenient for food prep. This hardneck variety stores well for 4-9 months when fully and properly cured and stored.  Grows well in northern climates.

Uses: Saute, sauces, roasting.

Island Rocambole

Flavor profile – Creamy with a sweet nutty flavor.

Physical characteristics –  8-10 cloves per bulb; wrappers may have purple/reddish stripes. This hardneck variety stores well for 4-6 months when fully and properly.

Uses: Pesto, minced in oil, garlic bread

Music

Flavor profile – rich, sweet flavor when roasted or sauteed and a lovely garlic flavor that is mild-enough to enjoy raw.

Physical characteristics – 9-12 cloves per bulb; wrappers have red tone.

Nootka Rose

Flavor profile – old flavor with a bit of spicy-ness makes it great for sauces, and pan-frying. The soft neck makes prep for roasting a breeze.

Physical characteristics – One of our longest storing garlic varieties. Red-streaked cloves on mahogany background with solid red clove tips. 9-12 cloves per bulb; wrappers have red tone.

Uses: Saute/ stir fry; sauces, roasting.

Persian Star

Flavor profile – Rich, sweet flavor with a peppery finish.

Physical characteristics – Exterior wrappers are with with purple on the inners. Red-tipped cloves with marbled streaks on whitish or yellow-brown back ground. 6-10 Cloves/bulb. Grows well in northern climates.

Uses: Saute/ stir fry; sauces, roasting, olive oil infusion.
